Warm supper

November 8th, 2007 at 12:16 am

I turned down the heat a bit before we ate, since it was a warm cozy sort of supper menu--no one noticed. (It is set on 63 now). I made potato soup this morning, and it simmered all afternoon. Also had some Apple Grunt and fried green tomatoes and bread that I baked yesterday. Only thing is, I forgot to put out the tomatoes. Oh well, I am eating them now.

Yum! We had potato soup last night. Hubby likes to add bacon and cheese and make baked potato soup. What a cozy meal for a cool night! But what is Apple Grunt? Sounds intriguing.

It is similar to apple crisp, but doughier and better. Here is my grandma's recipe, but I usually tripple it.

    Amish Apple Grunt
    1/2 cup sugar
    2 T soft butter
    1 egg
    1 cup white flour
    2 pinches salt (1/2 tsp)
2 pinches baking powder (1/2 tsp)
2 cups of sliced apples with or without the skins
1/2 sour milk or buttermilk (I use fresh milk with 1T of vinegar added to sour it)
    1/2 t vanilla
    7 T brown sugar
    1 1/2 T white flour
    2 pinches (1/2 t) cinnamon
    1 1/2 T butter

cream the sugar and butter together, then add in the eggs and mix well.
Sift the 1c of flour, salt and baking powder together and add to the above mix.
Mix the baking powder, milk and vanilla . Add in the apples and put into a buttered baking pan or cake pan.

Take remaining bown sugar flour, cinnamon and butter and mix till all crumbly, and sprinkle on top.

Bake at 375 for 35-40 min. When served, top with cream or ice cream.

    Makes 4 good sized servings.
